Savory Middle Eastern lentil and tomato dish, perfect with rice or couscous for a satisfying meal.
Ingredients:
  • 1 quart water
  • 1 cup dry lentils
  • 1 medium green bell pepper, chopped
  • 1 medium onion, chopped
  • 2.5 cups peeled, seeded, and chopped tomatoes
  • salt and pepper to taste
Instructions:
  • In a large pot, bring water to a rolling boil. Add in the lentils and gently stir. Lower the heat, allowing the mixture to simmer for 20 minutes. Drain the lentils before using in your recipe.
  • In a large skillet on medium heat, sauté bell pepper and onion in olive oil until tender. Add tomatoes, salt, and pepper, then stir in lentils. Simmer on low heat for 25 to 30 minutes until lentils are tender.
