Deliciously light strawberry cupcakes with a sweet surprise center of fresh strawberry preserves.
Ingredients:
  • 1 cup water
  • 1 cup mayonnaise
  • 2.5 tablespoons strawberry preserves
  • 12 large fresh strawberries
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a 12-cup muffin tin with greased cups or paper liners.
  • In a large bowl, combine flour, sugar, and baking soda; create a well in the center. Pour in water, mayonnaise, strawberry preserves, and vanilla extract; mix until batter is just combined. Spoon batter into muffin cups and top each with a strawberry.
  • Bake in the preheated oven for 20-25 minutes, until the tops spring back when gently pressed.
