Light and airy Gruyere gougeres: a delicious savory twist on cream puffs, perfect for appetizers.
Ingredients:
  • 1 cup water
  • 0.5 cup unsalted butter
  • 0.5 teaspoon white sugar
  • 1 cup all-purpose flour
  • 0.75 cup grated Gruyere cheese
  • 0.125 teaspoon cayenne pepper
  • 0.125 teaspoon ground black pepper
  • 2 tablespoons grated Gruyere cheese
  • 3 eggs, or more as needed
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C) and prepare a baking sheet with parchment paper.
  • In a saucepan, bring water, butter, and sugar to a boil. Take off the heat and swiftly mix in flour using a wooden spoon for 30 seconds to 1 minute.
  • Put the pan back on the heat and stir until the excess moisture evaporates, about 30 seconds to 1 minute. Transfer the dough into the bowl of a stand mixer with a paddle attachment and allow it to cool slightly.
  • Stir in 3/4 cup of flavorful Gruyere cheese along with a hint of cayenne and black pepper into the dough. Gradually beat in the eggs one by one, making sure to scrape down the sides of the bowl after each addition. If the mixture sticks to the beaters, incorporate an additional egg.
  • Drop tablespoonfuls of dough onto the prepared baking sheet, making sure to leave 2 inches of space between each one. Sprinkle a small pinch of the remaining Gruyere cheese on top of each puff.
  • Place your dish in the preheated oven for 10 minutes. Reduce the temperature to 375 degrees F (190 degrees C) and continue baking until the dish is puffed and golden brown, around 15 more minutes.
