Ingredients:
  • 125.00 gm boiling water
  • 6.00 gm powdered gelatine
  • 20.00 gm cocoa powder
  • 4 eggs, separated
  • 70.95 gm caster sugar
Instructions:
  • In a jug, mix water and gelatin until fully dissolved using a fork. Add 1 1/2 tablespoons cocoa and stir well. Let it cool for 10 minutes.
  • Using an electric mixer, whip egg whites in a large bowl until soft peaks form. Gradually add sugar, one tablespoon at a time, and continue beating until meringue is thick and glossy. Then, on high speed, incorporate egg yolks one at a time, making sure to beat well after each addition.
  • Pour the gelatine mixture into the egg mixture while beating constantly until well combined. Ensure both mixtures are at the same temperature before combining. Spoon mixture into 6 serving cups, then refrigerate for 4 hours until set and chilled. Dust with the remaining 2 teaspoons of cocoa and serve.
