Light and creamy pesto sauce with ricotta cheese for a satisfying twist on the classic basil pesto.
Ingredients:
  • 2 cups fresh basil
  • 2 cloves garlic
  • 1 tablespoon pine nuts
  • 0.25 cup part-skim ricotta cheese
  • 0.25 cup grated Parmesan cheese
  • 2 teaspoons olive oil
  • 2 tablespoons vegetable broth, or as needed
Instructions:
  • Pulse fresh basil leaves, garlic cloves, and pine nuts in a food processor until finely chopped. Combine ricotta cheese with the basil mixture and process until smooth. Then, repeat with Parmesan cheese, olive oil, salt, and black pepper. Pour in vegetable broth and blend until the sauce reaches a smooth consistency. Adjust the thickness by adding more broth if needed.
