Create fragrant lime and ginger pork cutlets to tantalize your senses.
Ingredients:
  • 36.80 gm vegetable oil
  • 4 x 175g pork loin cutlets
  • 80ml chicken stock
  • 160g conserve
  • 5cm-piece fresh ginger, peeled, cut into matchsticks
  • 500g packet frozen stir fry Thai style vegetables
  • 2 x 450g packets microwave jasmine rice
  • 60ml soy sauce
  • Coriander leaves, to serve
  • Thinly sliced fresh long red chilli, to serve
  • Lime wedges, to serve
Instructions:
  • In a large frying pan over medium-high heat, heat 1 tablespoon of oil. Brown cutlets for 2 minutes on each side. In a jug, combine stock, conserve, and ginger. Pour ginger mixture over the pork and cook for 3 minutes until pork is cooked through.
  • Place the pork on a heatproof plate and cover to ensure it stays warm. Cook the stock mixture for 5 minutes or until the sauce thickens.
  • Heat the remaining oil in a large frying pan over high heat. Cook the vegetables for 4 minutes until just tender. Mix in the rice and soy sauce, cooking for an additional 5 minutes until the rice is heated through. Serve with pork, sauce, coriander leaves, chili, and lime wedges.
