Ingredients:
  • 2 single chicken breast fillets
  • 2 limes, halved
  • 2cm piece fresh ginger, sliced
  • 2 garlic cloves, peeled, halved
  • 150mls white wine
  • Ground black pepper, to taste
  • 150g snow peas, topped
  • 100g cellophane (mung bean) noodles
  • 1/2 red capsicum, deseeded, thinly sliced
  • 1 carrot, peeled, coarsely grated
  • 2 Lebanese cucumbers, halved, thinly sliced
  • 4 green shallots, thinly sliced
  • 100g bean sprouts
  • 20.00 ml finely chopped fresh mint
  • 50g (1/3 cup) roasted peanuts
  • 1 lime, extra, juiced
  • 24.40 gm fish sauce
  • 20.00 gm caster sugar
  • 45.50 gm peanut oil
Instructions:
  • Preheat your oven to 180°C for the perfect cooking temperature.
  • In a small ovenproof dish, lay out the chicken fillets. Squeeze lime juice over the fillets and add the lime skins to the dish. Sprinkle with ginger and garlic, then pour white wine until chicken is covered. Season with pepper. Bake for 20-25 minutes until chicken is cooked. Rest for 10 minutes, then chill in the fridge.
  • Once the chicken has cooled, delicately extract it from the flavorful liquid and cut it into slender strips across the grain. Separate and reserve 2 1/2 tablespoons of the strained poaching liquid for later use.
  • Make the dressing by whisking together the reserved poaching liquid, lime juice, fish sauce, and caster sugar until sugar dissolves. Then, whisk in the peanut oil. Cover and set aside.
  • 1. Boil a large saucepan of salted water. Add the snow peas, cook briefly, then transfer them to a colander and rinse under cold water. Place in a large bowl. 2. Boil the remaining water, add the noodles, and cook for 2-3 minutes. Drain and rinse the noodles under cold water. 3. Combine the noodles with the snow peas, capsicum, carrot, cucumbers, green shallots, and bean sprouts. Season with pepper and toss everything together.
  • Combine the dressing and mint with the noodles, toss gently. Arrange the noodles on a platter or individual bowls/plates. Finish with sliced chicken and peanuts on top.
