Lime and garlic-marinated chicken served over fresh baby spinach leaves. Quick and hearty salad, perfect for summer evenings. Created on a busy weeknight for a light, tasty meal.
Ingredients:
  • 4 skinless, boneless chicken breast halves - cut into thin strips
  • 0.5 onion, chopped
  • 2 tablespoons minced garlic
  • 1 teaspoon fresh ground black pepper
  • 1 teaspoon flour
  • 0.25 cup fresh lime juice, or to taste
  • 4.5 cups baby spinach leaves
Instructions:
  • Combine chicken, onions, garlic, salt, pepper, and flour in a resealable bag. Mix in the lime juice and marinate for a few minutes.
  • Prepare a non-stick frying pan with olive oil cooking spray over medium heat. Empty the bag into the pan and cook until the onion softens (it does not need to be browned). Customize the flavor with extra lime juice. Serve on a bed of spinach.
