Tangy lime-tarragon marinade enhances juicy grilled chicken for a flavorful summer dish.
Ingredients:
  • 0.5 cup olive oil
  • 0.5 cup fresh lime juice
  • 2 tablespoons chopped onion
  • 2 teaspoons dried tarragon
  • 0.5 teaspoon hot sauce
  • salt and pepper to taste
  • 2 pounds bone-in chicken thighs
Instructions:
  • Combine olive oil, lime juice, onion, tarragon, salt, and hot sauce in a large resealable plastic bag. Shake well to mix. Add chicken thighs, coat evenly with the marinade, remove excess air, and refrigerate for a minimum of 4 hours.
  • Preheat the outdoor grill to medium heat and lightly oil the grate. Take the chicken out of the marinade, shake off any excess, discard the rest of the marinade, and then season with salt and pepper.
  • Grill the chicken thighs for around 30 minutes or until fully cooked through without any pink in the center. Feel free to cook them a bit longer if needed as chicken thighs are less likely to dry out.
