Lindor brownies

Rich chocolate brownies topped with Lindt balls and sprinkled with cocoa powder.
Ingredients:
  • 250g butter, chopped
  • 200g dark chocolate, chopped
  • 3 eggs, lightly whisked
  • 240g (1 1/2 cups, lightly packed) brown sugar
  • 100g (2/3 cup) plain flour
  • 50g (1/3 cup) self-raising flour
  • 20.00 gm dark cocoa powder, plus extra, to dust
  • 15 assorted chocolate balls, halved
Instructions:
  • Preheat your oven to 160C (140C fan forced), then generously grease a 16 x 26cm slice pan and line it with baking paper, leaving some overhang on the sides.
  • Gently melt butter and chocolate in a saucepan over low heat, occasionally stirring. Allow the mixture to cool before using.
  • Beat eggs, sugar, and vanilla with electric beaters until pale and doubled in volume in a large bowl. Stir in the chocolate mixture, then sift over the flours and cocoa powder. Gently fold everything together to combine.
  • Transfer the mixture into the prepared pan and bake for 35 minutes or until it's just set. Let it cool and then chill in the fridge until it's firm. Use the paper to lift the brownie from the tin, top with Lindor balls cut-side down, and dust with extra cocoa powder.
