Lindt ball pastel cheesecake

Indulgent no-bake cheesecake with strawberry and mango Lindor balls for a heavenly treat.
Ingredients:
  • 250g plain sweet biscuits
  • 150g unsalted butter, melted
  • 2 x 125g packets Strawberries & Cream balls, plus extra, to serve
  • 40.00 gm warm water
  • 3.00 gm gelatine powder
  • 500g cream cheese, chopped, at room temperature
  • 100g (1/2 cup) caster sugar
  • 300g sour cream
  • 200g white chocolate, melted, cooled
  • Lindt Lindor Mango & Cream balls, to serve
  • Fresh strawberries, to serve
  • Thinly sliced fresh mango, to serve
Instructions:
  • Prepare a 20cm springform pan by lining the base with baking paper and lightly greasing the sides. Pulse biscuits in a food processor until fine crumbs form. Add butter and pulse to combine. Press mixture into the pan firmly on the base and up the sides. Refrigerate until needed.
  • Melt the strawberry Lindor balls in a heatproof bowl placed over simmering water, stirring occasionally, for about 5 minutes until smooth. Ensure the bowl does not touch the water.
  • In a small microwave-safe bowl, pour the warm water. Sprinkle the gelatine over the water and stir until fully mixed. Microwave for 30 seconds, then whisk with a fork until the gelatine dissolves. Let it cool slightly before using.
  • Using electric beaters, mix the cream cheese and sugar until smooth. Blend in the sour cream and continue mixing. Finally, incorporate the white chocolate and gelatine mixture, mixing until well combined.
  • - Start by delicately layering half of the rich and creamy cream cheese mixture into the pan. Follow up by pouring half of the luscious melted strawberry mixture over it, using a flat-bladed knife to create beautiful swirls within the velvety cream cheese. - Next, layer the remaining half of the sumptuous cream cheese mixture and the rest of the melted strawberry mixture, and swirl them together once more to create a mesmerizing pattern. - Gently smooth out the top to create an irresistible finish. - Finally, allow this delectable creation to set in the fridge for either 4 hours or overnight, enhancing the flavors and textures to perfection.
  • Unmold the cheesecake and garnish with mango balls, extra strawberry balls, fresh mango, and strawberries.
