Indulgent self-saucing pudding with three blocks of rich dark chocolate on top. Dreamy dessert delight.
Ingredients:
  • 185ml (3/4 cup) milk
  • 80g unsalted butter
  • 225g (1 1/2 cups) self-raising flour
  • 155g (3/4 cup, firmly packed) brown sugar
  • 30g (1/4 cup) cocoa powder
  • 2 eggs, lightly whisked
  • 3 (100g each) Smooth Blend 70% Cocoa Mild Dark chocolate block
  • Cream or ice-cream (optional) to serve
  • 140g (2/3 cup, firmly packed) brown sugar
  • 375ml (1 1/2 cups) boiling water
Instructions:
  • Preheat your oven to 180C/160C fan forced. Lightly grease a 6cm deep, 20 x 30cm baking dish. In a large microwave-safe bowl, combine milk, butter, and vanilla. Microwave on High for 1-2 minutes until butter melts. Let it cool slightly.
  • Whisk together the flour, brown sugar, and cocoa with a balloon whisk in the cooled butter mixture. Gently whisk in the egg until well combined. Pour the mixture into the prepared dish and place it on a baking tray.
  • In a heatproof jug, mix together the sugar, cocoa powder, and boiling water until well combined.
  • Pour the sauce over the batter using the back of a large metal spoon. Bake for 25 minutes. Gently arrange the chocolate blocks on top of the pudding to completely cover it. Bake for an additional 1-2 minutes until the chocolate slightly melts. Serve with cream or ice-cream, if desired.
