Creamy bacon and mushroom pasta with a flavorful herb twist - a delightful upgrade to a beloved classic.
Ingredients:
  • 400g linguine
  • 18.20 gm olive oil
  • 4 bacon rashers, rind removed, finely chopped
  • 1 red onion, halved, thinly sliced
  • 120g Swiss brown mushrooms, thinly sliced
  • 125ml (1/2 cup) thickened cream
  • 40.00 ml chopped fresh continental parsley
  • 20.00 ml chopped fresh thyme
  • 100g feta, crumbled
Instructions:
  • Prepare the linguine in a generously salted pot of boiling water according to the package instructions, cooking until it reaches the ideal texture of al dente. Afterward, drain thoroughly and transfer back to the pot.
  • Heat oil in a medium frying pan over medium-high heat. Cook bacon and onion for 3 minutes until onion softens. Add mushroom and cook for 2 minutes until slightly soft. Stir in cream and simmer for 2-3 minutes until sauce thickens slightly.
  • Combine the creamy mixture, fresh parsley, and thyme with the linguine, gently mix until fully incorporated. Portion the pasta into serving bowls, season with pepper, and sprinkle with feta cheese. Serve promptly.
