Linguine with Broccoli and Red Peppers

Sautéed linguine with broccoli, red peppers, garlic, and olive oil, finished with Parmesan cheese for a tasty quick meal or side.
Ingredients:
  • 1 pound linguine pasta
  • 1 pound fresh broccoli, chopped
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, minced, or more to taste
  • 1 red bell pepper, thinly sliced
  • 1 pinch garlic salt
  • 0.25 cup grated Parmesan cheese
Instructions:
  • 1. Boil a generous amount of salted water in a large pot. Cook pasta until firm to the bite (al dente), for about 8 to 10 minutes. Drain well.
  • Microwave broccoli with a splash of water for 6 to 7 minutes until perfectly steamed.
  • Heat a mixture of olive oil and butter in a 10-inch skillet over low heat. Add garlic (adjust amount based on your preference) and red pepper slices; sauté gently.
  • Add drained broccoli to a skillet. Sprinkle with a touch of garlic salt and sauté with peppers until tender.
  • Combine the vegetables with the hot pasta, then generously sprinkle with Parmesan cheese.
