Liquor-Infused Irish Soda Bread

Elevate traditional soda bread with a generous splash of Bailey's® Irish cream liqueur.
Ingredients:
  • 4 cups all-purpose flour
  • 0.25 cup white sugar
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup butter, softened
  • 1 cup buttermilk
  • 0.25 cup Irish cream liqueur (such as Baileys®)
  • 10 ounces raisins
  • 0.25 cup butter
  • 0.25 cup buttermilk
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C), then give your baking sheet a quick spritz with cooking spray.
  • Combine flour, sugar, baking powder, baking soda, and salt in a large bowl. Add softened butter and mix until well combined.
  • Create a crater in the middle of the flour mix. Fill it with 1 cup buttermilk, egg, and 1/4 cup Irish cream liqueur, then drop in the raisins. Mix everything until raisins are evenly dispersed. Shape the dough into a circle, carve an 'X' on top, and lay it on a baking sheet. Keep aside.
  • In a small saucepan, gently melt butter over medium-low heat. Mix in 1/4 cup buttermilk and 1/4 cup Irish cream liqueur until smooth. Remove from heat and generously brush the mixture over the dough.
  • Bake in a preheated oven, basting the loaf every 15 minutes, until fully cooked in the center, for approximately 45 minutes. Allow the bread to cool on the pan for 10 minutes before transferring it to a cooking rack to cool completely.
