Indulgent chocolate mousses are a decadent finale for any elegant soiree.
Ingredients:
  • 150g dark chocolate, chopped
  • 189.38 gm thickened cream
  • 2 eggs, separated
  • 40.00 gm caster sugar
  • coloured cachous, to serve
Instructions:
  • In a heatproof, microwave-safe bowl, place the chocolate. Microwave it, uncovered, on medium (50%) for 1 to 2 minutes. Stir every 30 seconds with a metal spoon until the chocolate is melted and smooth. Allow it to cool for 5 minutes.
  • With an electric mixer, whip cream in a small bowl until soft peaks form. Set aside. Wash and dry beaters. In a separate small bowl, whip egg whites until soft peaks form. Sprinkle sugar over egg whites and continue beating for 1 to 2 minutes until the mixture is thick, glossy, and the sugar has dissolved.
  • Gently add egg yolks to the chocolate and combine using a metal spoon (refer to note). Mix one-third of the egg white mixture into the chocolate mixture until well combined. Gently fold in the rest of the egg white mixture, followed by the cream.
  • Transfer the mixture into a large resealable bag and cut a 1cm hole in one corner. Pipe the mixture into eight 70ml-capacity shot glasses. Cover with plastic wrap and refrigerate for 3 to 4 hours until set. Garnish with cachous and enjoy.
