Satisfy a crowd with these delicious loaded nachos filled with beef, cheese, beans, and more - ideal for game day snacking.
Ingredients:
  • 1 (18 ounce) package tortilla chips
  • 1.5 pounds cooked, Mexican-seasoned ground beef
  • 1 (15 ounce) can black beans, drained
  • 3 medium jalapeno peppers, thinly sliced
  • 3 cups pico de gallo
  • 1 (16 ounce) package shredded medium Cheddar cheese
  • 3 cups queso blanco dip, warmed
  • 0.25 head iceberg lettuce, shredded
  • 1 cup sour cream
  • 1 tablespoon water, or as needed
  • 2 stalks scallions, chopped
Instructions:
  • Preheat the oven to 400°F (200°C) and generously grease a baking sheet with cooking spray.
  • Start by laying out a single layer of tortilla chips on the tray. Spread half of the cooked beef evenly over the chips, making sure not to overwhelm them. Next, add one-third of the beans, jalapeno peppers, pico de gallo, and half of the Cheddar cheese in layers. Drizzle one-third of the queso blanco over the top. Repeat the layers once more, starting with chips and finishing with queso blanco. Cover everything with aluminum foil for baking.
  • Bake in a preheated oven for 20 minutes, then bake uncovered for an additional 5 minutes.
  • Transfer the nachos from the oven to a platter and generously top with shredded lettuce, remaining beans, jalapeno peppers, and pico de gallo.
  • Combine sour cream with a touch of water to slightly thin it out. Pour over the nachos. Drizzle the remaining queso blanco on top and garnish with scallions. Arrange the rest of the chips along the edges of the platter.
