Creamy potato and vegetable soup made with condensed potato soup and milk.
Ingredients:
  • 8 potatoes, peeled and cubed
  • 2 tablespoons butter
  • 2 stalks celery, diced
  • 2 carrots, shredded
  • 1 large onion, diced
  • 2 (10.75 ounce) cans condensed cream of potato soup
  • 1 cup milk
Instructions:
  • In a large saucepan, add potatoes and salt, then cover with water. Bring to a boil, then simmer until potatoes are just tender, about 15 minutes. Drain and set aside.
  • In a medium skillet, melt butter over medium heat. Sauté celery, carrots, and onion in the butter until the onion turns translucent.
  • In a large pot over low heat, gently simmer potatoes, vegetable mixture, cream of potato soup, and milk for 15 minutes. Adjust milk to reach desired thickness. Serve hot.
