Indulgent creamy potato soup made with milk, sour cream, butter, and cheddar cheese. Quick and easy with microwaved potatoes.
Ingredients:
  • 8 potatoes, peeled and cubed
  • 0.5 cup butter
  • 0.5 cup all-purpose flour
  • 8 cups milk
  • 0.25 cup chopped onion
  • 1 (8 ounce) container sour cream
  • 0.5 cup shredded Cheddar cheese
Instructions:
  • Microwave cubed potatoes in a glass dish for 7 to 10 minutes until tender.
  • Once the potatoes are simmering, melt the butter in a large pot over medium-high heat. Whisk in the flour until smooth, then slowly pour in the milk. Allow it to come to a boil, then lower the heat to medium and let it simmer for 5 to 10 minutes until it slightly thickens.
  • Add the potatoes and onion, cook for an additional 5 minutes. Mix in the sour cream and Cheddar cheese until smooth. Season with salt and pepper to taste.
