Lobster Bisque

Enhance lobster bisque with Progresso® chicken broth for a quick and delicious meal in just 25 minutes.
Ingredients:
  • 3 tablespoons butter or margarine
  • 1 small onion, finely chopped (1/4 cup)
  • 3 tablespoons Gold Medal™ all-purpose flour
  • 1 tablespoon chopped fresh parsley
  • 2 cups milk
  • 1 cup Progresso™ chicken broth (from 32-oz carton)
  • 1 1/4 cups chopped fresh or frozen (thawed) lobster (about 12 oz)
Instructions:
  • Melt butter in a 3-quart saucepan over low heat. Sauté onion until tender. Add flour, parsley, salt, and pepper. Cook until bubbly, stirring constantly. Remove from heat.
  • Combine the milk and broth in a pot, bring to a boil while stirring continuously. Boil and stir for 1 minute. Add the lobster and bring to a boil again; then reduce the heat and simmer for about 3 minutes, stirring often, until the lobster turns white.
