Try zucchini noodles ("zoodles") as a healthy, low-carb alternative to spaghetti. Top with your preferred pasta sauce for a tasty dish suitable for keto diets.
Ingredients:
  • 2 zucchinis, peeled
  • 1 tablespoon olive oil
  • 0.25 cup water
Instructions:
  • Peel zucchinis into long strips, avoiding seeds. Discard cores.
  • Create zucchini ribbons by stacking the strips and cutting them lengthwise to achieve a spaghetti-like shape.
  • In a skillet over medium heat, heat oil. Add zucchini "noodles" and cook for 1 minute. Pour in water and cook until zucchini softens and water evaporates, 5 to 7 minutes. Season with salt and pepper to taste.
