Low-fat barbecued prawns with lime, chilli & coriander

Elevate your barbecue with zesty prawns, a guilt-free indulgence!
Ingredients:
  • 42.00 gm fresh lemon juice
  • 24.40 gm fish sauce
  • 9.20 gm olive oil
  • 4 makrut lime leaves, deveined, finely shredded crossways
  • 2 large garlic cloves, finely chopped
  • 3 small fresh red chillies, deseeded, chopped
  • Salt & freshly ground black pepper
  • 1kg (about 12) large green king prawns, peeled leaving head and tail intact, deveined
  • 40.00 ml roughly chopped fresh coriander
  • Lemon wedges, to serve (optional)
Instructions:
  • In a spacious ceramic or glass bowl, mix together lemon juice, fish sauce, oil, lime leaves, garlic, and chillies. Season generously with salt and pepper.
  • Coat the prawns in the marinade by tossing gently. Refrigerate for 30 minutes to marinate.
  • Preheat a barbecue grill or chargrill on high. Grill the prawns in 3-4 batches, brushing with marinade, for 2-3 minutes per side until they change color, curl, and shells brown. Transfer the cooked prawns onto a plate and loosely cover with foil to keep warm as you cook the rest.
  • Transfer the prawns to individual serving plates, generously sprinkle with fresh coriander, and serve promptly with optional lemon wedges.
