Indulge in a guilt-free, revamped strawberry mousse dessert.
Ingredients:
  • 62.50 gm boiling water
  • 9.00 gm powdered gelatine
  • 3 egg whites
  • 40.00 gm caster sugar
  • 550g tub reduced-fat (98% fat-free) strawberry yoghurt (see note)
  • 250g strawberries, hulled, halved
Instructions:
  • Pour boiling water into a small heatproof jug. Sprinkle gelatine over the water and whisk with a fork until completely dissolved. Allow it to cool for 10 minutes.
  • Beat egg white and sugar with an electric mixer until soft peaks form.
  • In a bowl, combine yoghurt with gelatine mixture, whisking until smooth. Gently fold in egg white mixture until just combined. Transfer mixture to a 6 cup-capacity bowl. Cover and refrigerate for 4 hours until set.
  • Garnish the mousse with fresh strawberries and present it.
