Indulge in a guilt-free Italian lasagna that's light on the calories but heavy on flavor.
Ingredients:
  • Olive oil cooking spray
  • 1 medium brown onion, finely chopped
  • 400g lean beef mince
  • 412.50 gm tomato pasta sauce
  • 20.00 gm cornflour
  • 643.75 gm reduced-fat milk
  • 82.50 ml finely grated parmesan cheese
  • 9 dried lasagne pasta sheets
  • 125.00 ml grated light mozzarella cheese
  • Baby rocket, to serve
Instructions:
  • Preheat the oven to 200°C/180°C fan-forced. Spray a large saucepan with oil and heat over medium heat. Cook the onion for 5 minutes until softened. Add the mince and garlic, stir with a wooden spoon until browned, about 5 minutes. Pour in the pasta sauce and 1/4 cup of cold water, and bring to a boil.
  • In a jug, mix cornflour and 1/4 cup of milk. Pour the rest of the milk into a saucepan and heat over medium-high heat until boiling. Slowly whisk in the cornflour mixture. Stir and cook for 2 to 3 minutes until thickened, then add parmesan and mix well.
  • Layer the mince mixture, pasta, and white sauce in the ovenproof dish, repeating twice. Finish with a layer of white sauce and sprinkle with mozzarella. Bake for 40 minutes until the pasta is tender. Serve with rocket.
