Indulge in a romantic dinner for two with exquisite shrimp lasagna.
Ingredients:
  • 6 all’Uovo lasagne sheets
  • 82.50 ml frozen peas
  • 1 zucchini, peeled into ribbons
  • 125.00 ml light thickened cooking cream
  • 40.00 gm bought basil pesto
  • 1 tomato, diced
  • 12 cooked prawns, peeled
Instructions:
  • In a large saucepan of salted boiling water, cook the lasagne sheets until al dente, about 6 minutes. Add peas during the last 2 minutes and zucchini during the last 1 minute of cooking. Drain, don’t fret if lasagne sheets break slightly.
  • Heat the cream and pesto in a small saucepan over medium heat, stirring occasionally, until warmed for about 2 minutes. Season with salt and pepper to taste.
  • Divide the lasagne sheets, zucchini, peas, tomato, and prawns between two serving plates. Drizzle half the cream over the ingredients. Layer the remaining lasagne sheets, zucchini, peas, tomato, and prawns on top and pour over the remaining sauce.
