Transform fresh lasagna sheets into a delectable seafood lasagna dish!
Ingredients:
  • 40g butter
  • 1 medium leek, trimmed, halved, washed, thinly sliced
  • 2 medium carrots, peeled, finely chopped
  • 1 tsp fresh lemon thyme leaves
  • 82.50 ml plain flour
  • 510.00 gm chicken style liquid stock
  • 515.00 gm milk
  • 23.40 gm dijon mustard
  • 250.00 ml grated tasty cheese
  • 500g salmon fillets, cut into 2cm pieces
  • 200g ling fish fillets, cut into 2cm pieces
  • 400g prawn
  • 165.00 ml panko breadcrumbs
  • 6 fresh lasagne sheets
  • Green salad, to serve
Instructions:
  • Preheat your oven to 200°C (180°C fan-forced) and generously grease a 6cm-deep, 22cm x 31cm baking dish.
  • In a large frying pan over medium heat, melt butter. Add leek, carrot, thyme, and garlic, stirring and cook until leek softens, about 5 minutes. Sprinkle in flour and cook for 2 more minutes. Gradually pour in stock and milk, stirring constantly until slightly thickened, about 5-7 minutes. Stir in mustard and half of the cheese. Remove from heat and let stand for 10 minutes. Mix in salmon, ling, and prawns. Season with salt and pepper.
  • Mix breadcrumbs, olive oil, and the rest of the cheese in a bowl. Lay down 2 lasagne sheets in the baking dish. Add 1/3 of the seafood mixture on top. Layer with 2 more lasagne sheets and half of the remaining seafood mixture. Repeat with the rest of the lasagne sheets and seafood mixture. Sprinkle breadcrumb mixture on top. Bake for 35 to 40 minutes until pasta is tender and breadcrumbs are golden. Let it rest for 10 minutes before serving with salad.
