Crispy lumpia rolls stuffed with savory beef, pork, and veggies. Perfect make-ahead party appetizer - freeze and fry to serve fresh.
Ingredients:
  • 2 pounds ground beef
  • 2 pounds ground pork
  • vegetable oil
  • 1.5 cups carrots, finely chopped
  • soy sauce to taste
  • 3 cups bean sprouts
  • 1 cup sugar snap peas, chopped
  • 1 cup fresh mushrooms, finely chopped
  • 1 cup green onions, finely chopped
  • salt to taste
  • garlic powder to taste
  • black pepper to taste
  • 1 (14 ounce) package Lumpia Wrappers
  • 1 egg white, beaten
  • canola oil for frying
Instructions:
  • In a large frying pan over medium heat, brown beef and pork with a hint of oil. Drain and transfer to a large mixing bowl. In the same pan, sauté carrots with a splash of soy sauce until tender. Stir in bean sprouts, snap peas, mushrooms, and green onions. Season with soy sauce, salt, garlic powder, and black pepper. Cook and stir for 5 minutes until vegetables are tender yet crisp. Combine with beef and pork, toss well, and serve.
  • Take 5 spring roll wrappers and keep the rest covered with a damp cloth. Position the wrappers with one corner facing you. Spoon a small portion of filling onto the corner closest to you and fold over. Fold in the two outer corners, then roll up like a burrito, leaving the top corner open. Brush a bit of egg white on the top corner, complete rolling, and seal. Repeat the process with the rest of the filling and wrappers.
  • Preheat vegetable oil in a deep-fryer or deep skillet to 375 degrees F (190 degrees C. Fry rolls until golden brown, about 5 minutes, and then drain on paper towels.
