Irresistible Filipino egg rolls filled with flavorful veggies and spices.
Ingredients:
  • 3 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 0.5 teaspoon ground black pepper
  • 1 cup water
  • 0.5 cup diced carrots
  • 0.5 cup green beans, French cut
  • 0.5 cup diced celery
  • 1 (10 ounce) can bamboo shoots, julienned
  • 1 (8 ounce) can water chestnuts, drained and julienned
  • 0.5 cup jicama, peeled and julienned
  • 0.5 cup bean sprouts
  • 1 (16 ounce) package egg roll wrappers
  • 1 quart vegetable oil for frying
Instructions:
  • Saute garlic and onions in hot oil until onions are translucent. Stir in pepper and soy sauce and continue sauteing.
  • After draining excess oil, bring water to a boil. Add carrots and simmer for 5 minutes. Then add green beans, celery, bamboo shoots, water chestnuts, and jicama. Simmer for another 5 minutes, remove from heat, and stir in bean sprouts. Let cool to room temperature.
  • Place a generous amount of the filling diagonally near one corner of each wrapper, leaving a 1 1/2 inch space at both ends. Fold the side over the filling, tuck in both ends, and roll tightly. Moisten the other side of the wrapper with water to seal. Cover with plastic wrap to keep moist.
  • Preheat a wok over medium heat, pour enough oil to reach a depth of 1/2 inch, and heat for 5 minutes. Carefully add 3 or 4 egg rolls to the hot oil. Fry until crispy and golden brown on all sides. Transfer to paper towels to drain. Serve promptly.
