Delicious ginger cookies perfect for lunch boxes, gifts, or any occasion.
Ingredients:
  • cooking spray
  • 0.25 cup white sugar, or as needed
  • 1 cup dark brown sugar
  • 0.5 cup canola oil
  • 0.25 cup dark molasses
  • 1 egg
  • 2.3333332538605 cups all-purpose flour
  • 1.5 teaspoons baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon freshly grated ginger
  • 0.5 teaspoon ground cloves
  • 0.25 teaspoon salt
  • 0.25 teaspoon cayenne pepper
Instructions:
  • Preheat the oven to 350°F (175°C). Lightly coat 3 cookie sheets with cooking spray and place white sugar in a small, shallow bowl.
  • In a large bowl, mix together brown sugar, canola oil, molasses, and egg until well blended using an electric mixer.
  • Combine the flour, baking soda, ground ginger, grated ginger, cloves, salt, and cayenne pepper in a separate bowl. Mix the flour mixture into the molasses-egg mixture until well blended; the dough will be thick. Refrigerate or shape the dough as desired.
  • Shape dough into 1-inch balls, dust gently with white sugar, and arrange 2 inches apart on prepared cookie sheets.
  • Bake one sheet in the preheated oven for precisely 9 minutes. Cookies will be soft and turn crispy outside while staying chewy inside as they cool.
