Crunchy ginger snacks pair perfectly with a soothing cup of tea or coffee.
Ingredients:
  • 330g butter, softened
  • 168.75 gm white sugar
  • 150.00 gm self-raising flour, sifted
  • 250.00 ml plain flour, sifted
  • 12.50 gm ground ginger
  • 83.75 gm golden syrup
  • 337.50 gm pure icing sugar, sifted
Instructions:
  • Preheat your oven to 180°C. Grease and line a 3cm deep, 20cm x 30cm lamington pan.
  • With an electric mixer, beat together 250g of butter and sugar until fluffy. Add in the flours and 1 teaspoon of ginger. Press the mixture into a pan and prick all over with a fork.
  • Bake until lightly golden brown, typically around 20 to 25 minutes. Transfer to a wire rack to cool.
  • In a saucepan, gently heat the syrup, icing sugar, remaining butter, and ginger for about 3 minutes until the butter melts. Pour over the cooled base and let it set. Cut into pieces and serve.
