Lyonnaise potatoes

Savor the classic flavors of Lyonnaise potatoes as the perfect side.
Ingredients:
  • 1kg Coliban potatoes (see note)
  • 20g butter
  • 18.20 gm olive oil
  • 2 brown onions, halved, thinly sliced
  • 62.50 ml chopped fresh continental parsley
  • 2 garlic cloves, finely chopped
Instructions:
  • Boil the potatoes in a large pot of salted water for 20 minutes until tender. Drain and let them cool slightly before cutting into 2cm pieces.
  • In a large deep frying pan, heat the butter and oil until the butter is foaming. Add the onion and cook, stirring occasionally, for 10 minutes until caramelized. Then add the potatoes and cook, tossing frequently, for another 10 minutes until golden brown.
  • Combine the parsley and garlic, then toss together before serving.
