Classic French Salad Lyonnaise: A fresh & delicious meal for any time of day.
Ingredients:
  • 4 medium potatoes, peeled, thickly sliced
  • 100g sliced prosciutto, from the deli
  • 18.20 gm olive oil
  • 12 small shallots, peeled
  • 40.00 ml brand Mediterranean balsamic vinegar
  • 4 eggs, poached
  • 16.00 gm brand brown sugar
  • 120g pkt brand 4 leaf salad mix
Instructions:
  • Preheat your oven to 200C (or 180C fan) and line 2 baking trays with parchment paper. Partially cook the potato by steaming or microwaving it for 5 minutes. Place the potato slices in a single layer on one of the trays and bake for 15 minutes until golden. Bake the prosciutto on the second tray for 5-7 minutes until crispy.
  • Heat oil in a frying pan over medium heat. Cook shallots until golden, about 5 minutes. Stir in vinegar and brown sugar, then simmer until caramelised, 1-2 minutes.
  • Place salad leaves on a large platter. Sprinkle with potatoes and half of the caramelised shallots. Break prosciutto into pieces and scatter over the salad. Add the eggs on top and serve with the remaining shallots.
