Delicious Lyonnaise potatoes: par-boiled potatoes, caramelized onions, and butter, baked to perfection.
Ingredients:
  • 2 pounds russet potatoes
  • 4 onions, thinly sliced
  • 2 tablespoons chopped garlic
  • salt to taste
  • ground white pepper, to taste
  • 1 tablespoon finely minced fresh parsley
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C).
  • Peel and slice potatoes into 1/2-inch slices. Place them in a pot, cover with water, and bring to a quick boil for 2 minutes. Drain and set aside.
  • In a large oven-proof skillet over medium-high heat, pour in olive oil. Add onions and sauté until lightly caramelized, about 8 to 10 minutes. Stir in garlic and sauté until onions are deep brown and garlic is soft. Transfer the flavorful mixture to a bowl.
  • Return the skillet to the stove over gentle heat. Melt butter in the skillet, and layer 1/3 of the potatoes on the bottom. Season with salt and pepper. Add half of the onion mixture on top of the potatoes. Layer half of the remaining potatoes over the onions and season with salt and pepper. Spread the rest of the onion mixture on top. Finish with the remaining potatoes, seasoning again with salt and pepper.
  • Bake in the preheated oven until the potatoes are tender and golden brown on top, about 10-12 minutes.
  • Gently transfer the potatoes to a serving platter using a spatula. Just before serving, sprinkle them with freshly chopped parsley.
