Indulgent mac and cheese cupcakes with beer, two cheeses, and optional beer brats or popcorn topping.
Ingredients:
  • 4 tablespoons butter
  • 3/4 cup Progresso™ panko bread crumbs
  • 8 oz uncooked elbow macaroni
  • 1/4 cup Gold Medal™ all-purpose flour
  • 3/4 cup milk
  • 3/4 cup lager beer, such as a Boston lager
  • 1 cup shredded American cheese (4 oz)
  • 2 1/2 cups shredded extra-sharp Cheddar cheese (10 oz)
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • Slices of cooked beer bratwurst or popcorn, if desired
Instructions:
  • Preheat the oven to 375°F. Line 18 regular-size muffin cups with foil baking cups. In a small microwavable bowl, melt 1 tablespoon of butter in the microwave on High for 15 to 30 seconds. Stir in bread crumbs and set aside.
  • Prepare and cook macaroni according to package instructions, then drain.
  • Melt the remaining butter in a 4-quart saucepan over low heat. Add flour and cook for 1 minute while stirring with a whisk. Slowly pour in the milk and beer while stirring continuously. Cook and stir for 1 to 2 minutes until the mixture thickens and becomes smooth. Take the saucepan off the heat and mix in the cheeses, salt, and pepper. Finally, add the cooked macaroni and stir until well combined.
  • Divide 1/4 cup macaroni evenly among the cups, then sprinkle a generous pinch of breadcrumb mixture over each one.
  • Bake for 25 to 30 minutes until hot and topping is golden brown. Let it cool for 5 minutes, then remove from pan. Sprinkle with bratwurst or popcorn for garnish.
