Macadamia & golden syrup pies

Whip up a simple, affordable snack the whole family will love!
Ingredients:
  • 100g unsalted butter, melted
  • 125ml golden syrup
  • 100g brown sugar
  • 1.25 gm mixed spice
  • Zest and juice of 1 lemon
  • 3 eggs
  • 290g macadamia
  • Thick cream, to serve
  • Grated zest of 1 lemon
  • 100g icing sugar, sifted
  • 300g plain flour
  • 150g unsalted butter, chilled
  • 1 egg plus 1 extra egg yolk
Instructions:
  • For the pastry, combine zest, icing sugar, flour, butter, and a pinch of salt in a food processor until it forms fine breadcrumbs. Add egg and extra yolk, then mix until a smooth ball of dough forms (add 1-2 tablespoons chilled water if needed). Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  • Divide the pastry into 4 equal pieces and shape them into balls. Roll out each ball on a floured surface to line 6 lightly greased 11cm loose-bottomed tart pans. Chill for 15 minutes before preheating the oven to 200°C.
  • Prepare pastry shells by lining them with baking paper and filling them with pastry weights or uncooked rice. Blind bake for 10 minutes. Remove the paper and weights/rice, then bake for another 5 minutes until the pastry is light golden and dry.
  • Lower the oven temperature to 175°C.
  • In a large mixing bowl, combine butter, syrup, brown sugar, spice, zest, juice, and eggs. Beat until well mixed. Pour the filling into pastry shells and sprinkle with macadamias. Bake for 15-20 minutes until the filling is set and the nuts are golden. Let cool for 10 minutes, then remove from pans. Serve warm with cream.
