Garlic-seared sea bass with golden macadamia crust, served with mango cream sauce.
Ingredients:
  • 0.5 mango - peeled, seeded and diced
  • 0.5 cup heavy cream
  • 1 teaspoon lemon juice
  • 0.5 cup chopped macadamia nuts
  • 0.25 cup seasoned bread crumbs
  • 1 teaspoon olive oil
  • 0.5 teaspoon black pepper
  • 1 pinch red pepper flakes
  • 1 pound fresh sea bass
  • salt and ground black pepper to taste
  • 2 cloves minced garlic
  • 1 tablespoon extra virgin olive oil
Instructions:
  • Place macadamia nuts, bread crumbs, 1 teaspoon of olive oil, black pepper, and red pepper flakes in a food processor. Blend until smooth. Preheat oven to 350 degrees F (175 degrees C).
  • Place fragrant mangoes, rich cream, and tangy lemon juice in a small saucepan over medium heat. Allow the mixture to gently come to a boil, then lower the heat and simmer until it thickens beautifully.
  • Season fish with a pinch of salt and a sprinkle of black pepper. Heat 1 tablespoon of olive oil and crushed garlic in a large skillet over medium heat until fragrant. Sear the sea bass on both sides until beautifully golden, then set aside.
  • Place the fish in the preheated oven and roast until fully cooked. Add the macadamia crust on top of the sea bass and continue roasting until the crust is golden brown. Serve with the delicious mango cream sauce.
