Irresistible creamy macadamia soup the whole family will love.
Ingredients:
  • 450g unsalted macadamia nuts, roughly chopped
  • 3 medium potatoes, peeled, chopped
  • 1 large leek, white part only, washed, sliced
  • 1 brown onion, peeled, chopped
  • 1L (4 cups) chicken style liquid stock
  • 300ml thick cream
Instructions:
  • Heat your oven to 180°C.
  • Spread out 2 tablespoons of nuts on a tray and roast until golden brown.
  • Let's start by preparingsome delicious ingredients. In a large saucepan, combine the potatoes, leek, onion, and stock. Bring everything to a boil, then lower the heat and let it simmer for 20 minutes until the potatoes are nice and soft.
  • Take off the heat and let it cool slightly. Incorporate the rest of the macadamia nuts and blend in batches until smooth.
  • Mix in a generous amount of cream and season with a pinch of salt and pepper. Serve either chilled or hot, topped with the roasted nuts and slices of toasted baguette.
