Macaroni and Cheese with Ground Beef, Salsa and Green Chiles

Spice up your Mac & Cheese by swapping cheddar for pepper jack for an extra kick!
Ingredients:
  • 1 recipe Creamy Macaroni and Cheese
  • 1 pound lean ground beef
  • 0.125 teaspoon Salt and black pepper to taste
  • 1 tablespoon chili powder
  • 1 cup salsa (your choice of hotness)
  • 1 (4.5 ounce) can chopped green chilies
  • 0.25 cup minced fresh cilantro
Instructions:
  • Prepare the Creamy Macaroni and Cheese recipe, but substitute pepper Jack cheese for cheddar.
  • Preheat a 10-inch skillet over medium-high heat. Saute seasoned ground beef until most of the liquid evaporates, around 5 minutes. Mix in chili powder, salsa, and chilies; simmer for 2 to 3 minutes. Add cilantro, then combine with cooked macaroni. Serve while hot.
