Crowd-pleasing macaroni salad with eggs, olives, onions, and relish - a favorite side dish.
Ingredients:
  • 1 (16 ounce) package uncooked macaroni
  • 8 hard-cooked eggs, grated
  • 1 medium red onion, finely chopped
  • 1 (6 ounce) can black olives, drained and chopped
  • 1 (10 ounce) jar dill pickle relish, partially drained
  • 0.5 cup mayonnaise, or as needed
  • 1 tablespoon prepared yellow mustard, or to taste
  • salt and black pepper to taste
  • 4 hard-cooked eggs, sliced
  • paprika to taste
Instructions:
  • Bring a pot of generously salted water to a boil. Add macaroni and cook until al dente, about 8 to 10 minutes. Drain well.
  • Combine cooked pasta, grated eggs, onion, olives, and relish in a large bowl. Drizzle with some of the pasta cooking liquid. Add mayonnaise and mustard to taste, adjusting the mayo quantity as preferred. Season with salt and pepper. Garnish with sliced eggs and sprinkle with paprika before serving.
