Macerated strawberries and goat's cheese crostini

Irresistible gourmet canapé featuring bite-sized beauties that are both delicious and visually stunning.
Ingredients:
  • 60ml (1/4 cup) port
  • 40.00 ml balsamic vinegar
  • 250g punnet strawberries, washed, hulled, thinly sliced
  • 150g goat's cheese, at room temperature
  • 340g baguette, warmed, cut into 1cm-thick slices
Instructions:
  • In a small saucepan over high heat, combine the port and vinegar and bring to a boil. Reduce the heat to medium and simmer for 6 minutes until the mixture thickens into a syrupy consistency. Allow it to cool for 5 minutes before using.
  • Place ripe, juicy strawberries in a small bowl and generously pour the flavorful port mixture over them. Allow the berries to sit and soak up all the delicious flavors for a delightful 10 minutes.
  • Smear the creamy goat’s cheese onto the freshly sliced baguette and generously spoon the sweet strawberry mixture on top. Finish with a sprinkle of freshly ground black pepper for a burst of flavor.
