Savor a delightful pork salad with mixed greens, avocados, and corn for a delicious meal.
Ingredients:
  • 1 lb pork tenderloin
  • 1 bottle (12 oz) wheat beer
  • 1/4 cup white vinegar
  • 2 tablespoons lime juice
  • 1 tablespoon Dijon mustard
  • 1 bag (5.5 oz) mixed greens
  • 1 can (11 oz) whole kernel corn, drained
  • 1 cup whole dates pitted, halved
  • 1/2 cup roasted salted almonds
  • 2 avocados, pitted, peeled and sliced
  • 1 medium poblano chile, roasted, seeded, chopped
Instructions:
  • Marinate pork tenderloin in a cup of beer in a glass bowl, cover, and refrigerate for 1 hour. In another bowl, prepare Wheat Beer Vinaigrette by mixing remaining 1/2 cup beer and the vinaigrette ingredients. Refrigerate until serving.
  • Preheat your oven to 350°F. Place the pork in a shallow pan and bake for 40 to 50 minutes until it reaches an internal temperature of 160°F with a slight blush of pink in the center. Allow the pork to cool slightly, then shred it using two forks.
  • Combine greens, corn, dates, and almonds in a large serving bowl. Drizzle 1/2 cup of vinaigrette over the salad and toss until well coated. Top with shredded pork, avocado slices, and poblano chile. Serve with the extra vinaigrette on the side.
