Spicy salsa from Veracruz and Oaxaca, similar to chili crisp but with unique flavor. Adjust heat level with chilies de árbol.
Ingredients:
  • 1 ancho chile peppers
  • 1 Guajillo chile peppers
  • 6 chile de árbol peppers, or to taste
  • 1 cup vegetable oil
  • 1 tablespoon sesame seeds
  • 4 garlic cloves, chopped
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon salt, or to taste
  • 1/2 teaspoon Mexican oregano
  • 1/4 cup peanuts
Instructions:
  • Prepare the chili peppers by removing the stems and seeds, then finely chop into 1/4-inch pieces. Set aside for later use.
  • 1. Warm the oil over medium heat until it shimmers then add sesame seeds and garlic. Stir constantly until the sesame seeds are golden and the garlic is crispy, which should take about 5 minutes. Remove from heat and mix in the chili peppers until well combined. Allow it to cool at room temperature for approximately 10 minutes.
  • Combine vinegar, salt, and Mexican oregano. Transfer the mixture to a food processor and pulse until salsa is just combined. Gently fold in peanuts.
