Delicious Filipino dessert made with sweet coconut pudding, corn kernels, and toasted coconut. Served in slices.
Ingredients:
  • 0.5 cup water
  • 0.5 cup cornstarch
  • 1 cup coconut milk
  • 0.75 cup water
  • 0.5 cup white sugar
  • 0.25 cup fresh sweet corn kernels
  • 0.25 cup sweetened flaked coconut
Instructions:
  • Grease an 8-inch baking dish or pie pan and leave it aside. Combine 1/2 cup of water with cornstarch in a bowl, and stir until smooth.
  • In a saucepan over low heat, mix together coconut milk, 3/4 cup of water, and sugar until sugar dissolves. Bring to a boil, add corn kernels, then quickly stir in cornstarch mixture until thick. Simmer for 2 minutes until smooth. Pour into dish, let cool and firm up for about 2 hours.
  • Toast coconut flakes in a dry skillet over medium heat, stirring constantly until golden brown. Transfer to a bowl, cool, and sprinkle over pudding before serving.
