Delicious Filipino coconut pudding with corn, made with evaporated milk and sweetened condensed milk. Chilled for four hours, then topped with toasted coconut. Perfect for gatherings, not too sweet.
Ingredients:
  • 105g (3/4 cup) cornflour
  • 375ml (1 1/2 cups) evaporated milk
  • 400ml can coconut milk
  • 250ml (1 cup) sweetened condensed milk
  • 55g (1/2 cup) drained canned corn kernels
  • Toasted shredded coconut, to sprinkle
Instructions:
  • Prepare a 20cm square cake pan by greasing it and lining the base and sides with baking paper.
  • In a large saucepan, combine the cornflour and gradually stir in the evaporated milk until fully incorporated.
  • Pour the coconut milk and condensed milk into the pan. Whisk consistently over medium heat until the mixture boils and thickens. Stir in the corn until it thickens to a paste-like consistency. Remove from heat and pour into the pan. Lightly tap on the counter to remove air bubbles. Let it cool completely and refrigerate for 4 hours to set.
  • Serve by cutting the dish into squares and generously sprinkling with coconut.
