Overnight breakfast burritos to jumpstart your day: prep ahead, bake, and savor a flavorful, hearty meal with a zesty salsa twist.
Ingredients:
  • 1 lb bulk pork sausage
  • 2 green onions, chopped
  • 8 eggs
  • 1 tablespoon butter
  • 1 package (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count)
  • 1 cup shredded Cheddar cheese (4 oz)
  • Thick & chunky salsa
  • Sour cream
Instructions:
  • In a 10-inch skillet, sauté pork sausage until fully cooked; discard excess grease. Add green onions, then transfer the mixture out of the skillet and set aside.
  • In a large bowl, whisk eggs until smooth. Use a paper towel to wipe the skillet clean. Then, in the same skillet, melt butter and add the beaten eggs. Stir frequently until scrambled and cooked through. Gently mix in the sausage and onions.
  • Follow package instructions to warm tortillas. Evenly distribute the sausage on each tortilla. Sprinkle 2 tablespoons of cheese on each. Fold and roll up to form burritos. Place in a freezer container with waxed paper between layers. Freeze for 8 hours or overnight.
  • The night before, thaw burritos in the refrigerator. The next morning, preheat the oven to 350°F. Individually wrap each burrito in foil and place on a cookie sheet. Bake for 10 to 15 minutes until heated through. Enjoy with salsa and sour cream.
