Meatloaf muffins topped with a sweet and tangy glaze, perfect for meal prep and convenient on-the-go eating.
Ingredients:
  • cooking spray
  • 1 pound extra-lean ground beef
  • 1 cup diced petite-cut tomatoes
  • 1 cup seasoned bread crumbs
  • 0.25 cup egg substitute
  • 4 tablespoons ketchup, divided
  • 2 tablespoons dried minced onion
  • 1 tablespoon Worcestershire sauce
  • 0.75 teaspoon ground black pepper
  • 2 tablespoons packed brown sugar
  • 1 tablespoon apple cider vinegar
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and give your 12-cup muffin tin a quick spritz with cooking spray.
  • Mix together the beef, tomatoes, bread crumbs, egg substitute, 3 tablespoons of ketchup, dried onion, Worcestershire sauce, salt, and pepper in a bowl. Use the mixture to fill the muffin cups.
  • Combine the remaining ketchup with brown sugar and vinegar to craft a delectable glaze. Drizzle the glaze over the muffins using a brush or spoon.
  • Bake in the preheated oven for about 35 minutes, or until muffins are fully cooked in the center. Check with an instant-read thermometer – it should register at least 160 degrees F (70 degrees C).
