Try this delightful dessert after your BBQ.
Ingredients:
  • 1.125L (4 1/2 cups) water
  • 115g (1/2 cup) caster sugar
  • 42.00 gm lime fruit juice cordial (Schweppes brand)
  • 10 fresh makrut lime leaves, torn
  • 1 (about 600g) pineapple, peeled, halved, core removed
  • 375ml (1 1/2 cups) water
  • 5cm piece fresh ginger, peeled, thinly sliced
Instructions:
  • Dice the pineapple into 1cm cubes and place in a large bowl. In a small saucepan, combine water, sugar, and ginger. Stir over low heat until the sugar dissolves, then increase heat to medium and bring to a boil. Simmer without stirring for 5 minutes until slightly reduced. Remove from heat and cool for 20 minutes. Strain the ginger mixture over the pineapple, cover with plastic wrap, and refrigerate for 6 hours or overnight to marinate.
  • Combine water, sugar, lime cordial, and lime leaves in a saucepan. Stir over low heat until sugar dissolves. Increase heat to medium-high and bring to a gentle boil. Simmer, uncovered, for 10 minutes until slightly reduced and fragrant. Remove from heat, strain into a bowl, and let cool for 20 minutes.
  • Gently pour the chilled lime syrup into a 1-liter (4-cup) loaf pan, cover with plastic wrap, and freeze for 6 hours or until solidified.
  • Use a robust fork to scrape the frozen lime mixture into coarse crystals. Cover and return to the freezer for up to 1 hour.
  • Spoon the ginger pineapple into serving glasses or dishes and sprinkle with the lime granita. Serve promptly.
