Elevate roast chicken with vibrant kaffir lime flavors.
Ingredients:
  • 1.5kg whole fresh chicken
  • 50g butter, at room temperature
  • 3 makrut lime leaves, finely shredded
  • 1 garlic clove, crushed
  • 1 lime, cut into wedges
  • 1kg Kent pumpkin, deseeded, cut into wedges
  • 3 red onions, quartered, leaving base intact
  • Makrut lime leaves, extra, to serve
  • Steamed baby buk choy, to serve
Instructions:
  • Preheat the oven to 200°C. Rinse the chicken under cold running water, then pat dry. Mix butter, lime leaves, and garlic in a bowl. Gently loosen the chicken skin to create a pocket and spread the butter mixture under the skin. Fill the cavity with lime wedges. Transfer the chicken to a roasting pan, season with salt and pepper, and roast for 50 minutes.
  • Take out the roasting pan from the oven. Arrange the pumpkin and onion in a single layer around the chicken, ensuring they are coated in pan juices. Continue roasting in the oven for an extra 30 minutes or until the thigh's juices run clear when pierced with a skewer. Place the chicken on a plate, keep the pan juices, cover the chicken with foil, and let it rest for 10 minutes. Move the pumpkin and onion to a wire rack over a baking tray and roast for another 10 minutes until the pumpkin is golden and tender.
  • Arrange the chicken in a generous serving platter and generously drizzle with the flavorful pan juices. Garnish with additional zesty lime leaves and present alongside the caramelized pumpkin, onion, and tender steamed baby bok choy.
