Malted milk custard eclair slice recipe

Indulgent slice made with malted milk biscuits, Maltesers, custard, and eclairs, a heavenly combination for your new favorite treat.
Ingredients:
  • 320g Arnott’s Malt ‘O’ Milk biscuits
  • 300ml thickened cream
  • 180ml (3/4 cup) Cottee’s Thick ‘N’ Rich Caramel Flavoured Topping, plus extra, to drizzle
  • 360g (1 1/2 cups) French Vanilla Double Thick Custard
  • 12.00 gm gelatine powder
  • 80g Maltesers
  • 80g dark chocolate, melted
  • 18.40 gm vegetable oil
Instructions:
  • Prepare a 23cm square cake pan by greasing the base and sides with baking paper that overhangs on 2 sides. Arrange half of the biscuits on the pan's base, cutting to fit if needed.
  • In a large bowl, whip the cream and caramel topping with electric beaters until soft peaks form. In another large bowl, place the custard.
  • Place 2 tablespoons of water in a small microwave-safe bowl. Sprinkle with gelatine and stir until combined. Microwave on High for 10 seconds (do not overheat). Whisk with a fork until gelatine dissolves. Let it cool slightly. Fold the gelatine into the custard, then fold into the cream mixture. Spread evenly over the biscuit base, smoothing the surface. Top with remaining biscuits, trimming if needed. Chill in the fridge for 6 hours or overnight to set.
  • Roughly chop half of the Maltesers. Combine chocolate and oil in a small bowl until smooth. Spread mixture over the biscuit layer, then top with all the Maltesers. Chill until set. Drizzle with extra caramel topping, cut into squares, and serve.
