Zesty mandarin salad with sweet almonds.
Ingredients:
  • 1 head romaine lettuce - rinsed, dried and chopped
  • 2 (11 ounce) cans mandarin oranges, drained
  • 6 green onions, thinly sliced
  • 2 tablespoons white sugar
  • 0.5 cup sliced almonds
  • 0.25 cup red wine vinegar
  • 0.5 cup olive oil
  • 0.125 teaspoon crushed red pepper flakes
Instructions:
  • Mix the romaine lettuce, oranges, and green onions together in a large bowl.
  • In a saucepan over medium heat, caramelize 2 tablespoons sugar with the almonds until they are coated in a light brown color. Transfer the almonds to a plate and let them cool for 10 minutes before serving.
  • In a sealed jar, shake together red wine vinegar, olive oil, sugar, red pepper flakes, and black pepper until the sugar is fully dissolved.
  • Coat lettuce with salad dressing, transfer to a stylish serving bowl, and top with sugared almonds before serving.
